Tacos are one of my weaknesses. One of the things I like the most about a taco is it’s versatility. You can honestly use any protein you want, top it with avocado and call it a wrap! No pun intended. One thing I’ve learned during this Fast is how easy it is to convert Mexican food to vegetarian and/or vegan options, if you don’t mind vegan cheese. Avocado Toast is such a simple and versatile meal to make. You can literally customize it to your own liking. I tend to keep mine the same because the ingredients are staples in a lot of my meals and are typically always in my fridge. Avocado toast also forces me to be a bit more intentional with adding healthy options to my meals, as well.
