Easy Eats is a series that focuses on simple meals and community. In this episode I'm sharing my favorite breakfast to make during the Holidays! French Toast is a house fave but I'm turning it up a notch by usiing flaky buttery croissants. I invited my friend and hairstylist over for brunch fir great food, minosas, and of course a little girl talk.

ON THE MENU:
Croissant French Toast with berries and Whiskey maple syrup
Small fresh fruit spread
Orange Juice mimosas

A Leo Celebration- 2022. Turning 41!

Easy Eats is a series that focuses on simple meals and community. In this first episode I'm preparing green chili chicken enchiladas on a beautiful table setting for my girls!

ENCHILADAS
Ingredients:
1 Rotissirie chicken - Chop or shred
1 green bell pepper - Chop
1/2 white onion - Chop
taco seasoning to taste
Mexican style shredded cheese
10 flour tortillas
2 jars of salsa verde
Cilantro (optional)

Instructions:
1. Mix chicken, cheese, and seasoning in bowl
2. Saute vegetables until soft
3. Add chicken mixture to skillet. Cook until hot and cheese is melted
4. Remove from heat
5. Pour salsa in the bottom of the pan.
6. Add tortillas to the pan, add salsa and chicken mixture. Roll and Repeat
7. Pour salsa and cheese on top of finished enchiladas
8. Put in oven for about 15-20 minutes or until the cheese is bubbling brown
9. Top with cilantro (optional)

SHRIMP + AVOCADO SALAD (CEVICHE STYLE)
Ingredients:
1 lb of shrimp - Peeled and deveined
Pico de Gallo
1 lime
Tortilla chips

Instructions:
1. Lightly saute shrimp
2. Chop and add shrimp to pico de Gallo
3. Squeeze lime juice
4. Serve with Tortilla chips

Wine Served: Cabarnet Sauvignon by Longevity Wines
