21 Day Fast | Vegan Nachos Recipe


Fasting can present a number of challenges. Whether it’s physically, mentally, financially, or spiritually, there are adjustments that have to be made. I’m currently on a spiritual fast that will benefit me physically, mentally, financially, and spiritually! One of the conditions of this Fast is the removal of meat and dairy from my diet. I was a practicing vegan for about 6 years, but slowly reintroduced meat back into my life over the last year. I want to use this Fast as an opportunity to reset my body and transition back to a cleaner diet.

Preparing meals that don’t consist of meat takes a lot more work and planning but the meals don’t have to be complicated. My quick, go to, meal, that’s perfect for game days is vegan nachos. It’s really simple to make and takes about 30 minutes. Most of the time is taken by chopping the fresh veggies and griding the vegan sausage to a ground meat consistency. I wanted to share my meals with you throughout this 21 day Fast and have provided the vegan nacho recipe for you below.


INGREDIENTS:

  • Field Roast Apple Sausage
  • Bell Peppers ( I like to use all colors available)
  • Jalapeno
  • White Onion
  • Cilantro
  • Mushrooms (Optional)
  • Lime Tortilla chips
  • Taco Seasoning
  • Non Dairy Queso ( I like the cashew queso from Primal Kitchen)
  • Shredded Vegann cheese

INSTRUCTIONS:

  1. Chop/Grind apple sausage to a ground meat like consistency
  2. Chop all vegetables and Sautee to your liking
  3. Add ground sausage and vegetables to a skillet
  4. Sprinkle in Vegan shredded cheese
  5. Add taco seasoning
  6. Warm queso (a quick zap in the microwave or stove top will do)
  7. Top tortilla chips with meat mixture
  8. Pour queso on top
  9. Garnish with cilantro

Obviously, you can add other toppings like tomatoes, lettuce, and guacamole on top if you like, but I like mine a little basic.
