If I’m being honest, veggie wrap wasn’t on my food radar. One thing I’ve learned during this Fast is how easy it is to convert Mexican food to vegetarian and/or vegan options, if you don’t mind vegan cheese. Avocado Toast is such a simple and versatile meal to make. You can literally customize it to your own liking. I tend to keep mine the same because the ingredients are staples in a lot of my meals and are typically always in my fridge.
