Whenever I’m invited to a dinner and asked to bring a dish, my go-to is typically a dellicious salad. Salads tend to be forgotten on the menu and I have no problem adding them to the table. Typically, when making a salad, we toss them in a bowl and they sometimes get forgotten. Well, this particular salad is guaranateed to impress your guest at your next dinner party.
I found this recipe here and wanted to try it myself. I love finiding recipes and making them my own and I encourage you all to do the same. I think I’ll add walnuts to it next time.
INGREDIENTS:
- Juice of 1 Lemon
- 1 tbsp Dijon Mustard
- 1/3 Cup Extra Virgin Olive Oil*
- Kosher Salt & Ground Black Pepper
- 6 oz of Spinach
- 1 Large Shallot
- 4 oz of prosciutto
- 12 figs Hlaved
- 1/3 cup crumbled blue cheese*
INSTRUCTIONS:
DRESSING:
- Whisk together the lemon juice and Dijon
- Slowly add the olive oil
- Season with salt and pepper
TOSS:
- Toss the spinach and shallots in a small bowl
- Add the dressing and toss
ARRANGE:
- Spread salad on board
- Add prosciutto and figs
- Sprinkle blue cheese
- Drizzle dressing

Now, let’s pair this beautiful and delicious salad with the best wine. When I was trying to pair the best wine with this salad, I wanted to focus on one ingredient in the salad, blue cheese. Known for it’s tangy and sharp flavor, blue cheese is a great partner to Chardonnay’s fruit filled nature. In wine pairing, a good rule of thumb is “Opposites Attract.” Blue cheese’s intense flavors contrasts with Chardonnay’s smooth and refreshing profile. You are sure to enjoy this duo!
