Tacos are one of my weaknesses. One of the things I like the most about a taco is it’s versatility. You can honestly use any protein you want, top it with avocado and call it a wrap! No pun intended. My most recent taco obsession is the roasted sweet potato taco. It’s quick, filling, flavorful, and doesn’t require a ton of ingredients.
INGREDIENTS:
- Corn Tortillas ( I like the street taco style)
- 2 Sweet Potato
- 1 tbsp of olive oil
- 1/2 tsp chili powder
- 1/4 tsp paprika
- 1/4 tsp cinnamon
- 1/4 tsp garlic powder
- 1/4 tsp onion powder
- salt and pepper (pinch)
- Avocado
- Tomato
- Lime
- Brocolli and Kale salad from Trader Joe’s
INSTRUCTIONS:
- Preheat oven to 425
- Peel and Cut sweet potatoes until small cubes
- Drizzle sweet potatoes with olive oil
- Add all spices to sweet potatoes in bowl and toss
- Add to baking sheet and bake for 25 minutes
- Slice avocados and add to bowl with garlic powder and mash
- Add chopped tomatoes to avocados and squeeze lime juice
- Prepare salad as instructed on bag including dressing
- Once sweet potatoes are done, add a spoonful to the tortilla
- Add salad
- Top with Avocado
- SERVE!
