If I’m being honest, veggie wrap wasn’t on my food radar. It’s not a meal that I trypically grab for, but I had a pack of flour tortillas left over from the veggie quesadillas and didn’t want them to go to waste. As a result, the veggie wrap was created! It’s really simple and a great lunch, especially if you’re working from home.
INGREDIENTS
- Flour Tortilla
- Hummus (Whichever flavor you prefer)
- Edamame (Cooked/steamed)
- Red Bell Pepper
- Green Bell Pepper
- Mushrooms
- Yellow Onion
- Spinach
- Shredded Carrots
- Cucumber
- Avocado
- Salt and Pepper to taste
- Everything But the Bagel seasoning
- Olive Oil
INSTRUCTIONS:
- Chop all veggies, season with seasoning and set aside
- Spread hummus over tortilla
- Add veggies to the tortilla
- Drizzle small amount of olive over veggies
- Wrap tortilla
- Cut in half
I also made a glass of watermelon punch to wash the wraps down with. A few months back, I purchased a HUGE watermelon from this watermelon truck on the side of the road. It was delicious but too much for me to consume so I sliced it and froze it. The frozen cubes made for a great smoothie with a few teaspoons of honey, water, and a little sugar to sweeten it more. I’m definitely going to revisit this drink over the summer.
